Kagoshima prefecture (鹿児島県 Kagoshima-ken) is the southernmost prefecture on the island of Kyushu, Japan. The prefecture also covers a large number of islands around the southern coast extending halfway to Okinawa.

芋焼酎(Imo-Jyo-chu): A kind of 焼酎(Sho-chu), strong liquor, made from sweet potato. Imo-jyo-chu has been made for over 500 years in Kagoshima as a traditional alcohol; it is also protected by the WTO. It tastes very rich and has a peculiar smell. Recently, odourless Imo-jyo-chu has been produced for people who don’t like the smell. Three kinds of Imo-jyo-chu, Mori-izo, Maou and Murao are very rare.

The local custom is to drink shochu mixed with hot water, called "お湯割り" (oyu-wari).
